Maple-walnut Muffins Recipe

Ingredients
  • 1 c sugar
  • 1 (8-oz) carton plain nonfat yogurt
  • 2 tbsps maple syrup
  • 2 1/4 c all-purpose flour
  •  Vegetable cooking spray
  • 1/2 c chilled reduced-calorie stick margarine, cut into small pieces
  • 1 tsp imitation maple flavoring
  • 3 egg whites, lightly beaten
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 c sliced walnuts

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 5 ingredients In a large-ish bowl; cut in margarine with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #3 Combine maple syrup, maple flavoring, egg whites, & yogurt; add to dry ingredients, stirring just until dry ingredients are moistened.
  • Step #4 Divide batter evenly among 18 muffin c coated with cooking spray; sprinkle walnuts evenly over batter.
  • Step #5 Bake at 350° for 25 mins or until muffins spring back when touched lightly in center.
  • Step #6 Remove from pans as soon as possible; let cool on a wire rack.
