Cornmeal Waffles Recipe

Ingredients
  • 1 c all-purpose flour
  • 1 1/2 c low-fat buttermilk
  • 2 tsps baking powder
  • 2 large egg yolks
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/2 c maple syrup
  • 2 large egg whites
  •  Cooking spray
  • 3/4 c yellow cornmeal

Directions
  • Step #1 Coat a waffle iron with cooking spray, & preheat.
  • Step #2 Lightly spoon flour into a dry measuring c, & level with a knife.
  • Step #3 Combine flour, cornmeal, & salt In a large-ish bowl, baking powder, & make a well in center of mixture.
  • Step #4 Place buttermilk, & egg yolks in a bowl, oil, maple syrup, & stir well with a whisk.
  • Step #5 Add buttermilk mixture to flour mixture; stir just until moist.
  • Step #6 Beat egg whites with a mixer at high speed until stiff peaks form.
  • Step #7 Gently fold egg whites into cornmeal mixture.
  • Step #8 Spoon about 1/2 c batter onto hot waffle iron, spreading batter to edges.
  • Step #9 Cook for 3 to 5 mins or until done; repeat procedure with remaining batter.
