Pumpkin Bread Recipe

Ingredients
  • 1/2 c molasses
  • 1/2 c canola oil, plus more for the pan
  • 2 c all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp ground ginger
  • 1/2 tsp baking soda
  • 3/4 c granulated sugar
  • 1/4 tsp ground nutmeg
  • 3/4 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1 1/2 tsps baking powder
  • 1/4 tsp ground cloves
  • 1 c pumpkin pie filling (not pure pumpkin)

Directions
  • Step #1 Heat oven to 350° F.
  • Step #2 Oil a 9-by-5-inch loaf pan.
  • Step #3 In a large bowl, molasses, mix the pumpkin pie filling, sugar, oil, & vanilla.
  • Step #4 In a separate bowl, nutmeg, salt, baking powder, mix the flour, cloves, cinnamon, baking soda, & ginger.
  • Step #5 Slowly stir the flour mixture into the pumpkin mixture.
  • Step #6 Pour into the prepared pan.
  • Step #7 Bake for 60 to 65 mins.
  • Step #8 Transfer pan to a wire rack for 10 mins.
  • Step #9 Using a knife, loosen the bread from the pan.
  • Step #10 Invert it onto a cutting board.
  • Step #11 Serve warm.
  • Step #12 In Advance: Bake the bread & let it cool.
  • Step #13 Wrap & set aside at about room temp for up to 24 hrs.
  • Step #14 Cover up with foil wrap & warm in a 250° F oven for 30 mins.
  • Step #15 To Freeze: Place the cooled bread in a resealable plastic bag or cover with 2 layers of plastic wrap.
  • Step #16 Store for up to 3 months.
  • Step #17 To Reheat: Refrigerate the bread overnight.
  • Step #18 Remove the plastic wrap, cover with aluminum foil wrap, & warm in a 250° oven for 30 mins.
