Blueberry Biscuits Recipe

Ingredients
  • 1 tsp salt
  • 3/4 c buttermilk
  • 1/4 tsp baking soda
  • 1/2 c frozen blueberries, thawed
  • 1/3 c shortening
  • 2 c all-purpose flour
  • 1 large egg
  • 2 tsps baking powder
  • 2 tbsps sugar
  • 3 tbsps butter or margarine, melted
  • 1/4 tsp ground cinnamon
  • 1/2 c sugar

Directions
  • Step #1 Pat blueberries dry with paper towels; set aside.
  • Step #2 Combine flour & next 4 ingredients In a large-ish bowl; cut in shortening with a pastry mixer until crumbly.
  • Step #3 Whisk together egg & buttermilk; add to flour mixture, stirring just until dry ingredients are moistened.
  • Step #4 Gently fold in blueberries.
  • Step #5 Turn dough out onto a lightly floured surface; knead 3 or 4 times.
  • Step #6 Pat or roll dough to 3/4-inch thickness; cut with a 2 3/4-inch round cutter, & place on a lightly greased baking sheet.
  • Step #7 Bake at 400° for 15 mins or until biscuits are golden brown.
  • Step #8 Stir together butter, 2 tbsps sugar & cinnamon; brush mixture over warm biscuits.
  • Step #9 NOTE: Recipe can be doubled.
  • Step #10 Store biscuits in an airtight container for up to 3 weeks in freezer.
