Coconut Chocolate Cake Recipe

Ingredients
  • 1 (18.25 oz) package dark chocolate cake mix
  • 3/4 c evaporated milk
  • 1 tsp vanilla extract
  • 14 oz flaked coconut
  • 1 c white sugar
  • 3 tbsps unsweetened cocoa powder
  • 4 c confectioners' sugar
  • 20 large marshmallows
  • 2 tbsps butter

Directions
  • Step #1 Mix & bake cake mix as directed for two 8 or 9 inch layers.
  • Step #2 Let layers cool then split each one in half horizontally to make a total of 4 layers.
  • Step #3 In a saucepan over med-heat/flame mix together the white sugar, butter or margarine, & 1/2 c of the evaporated milk.
  • Step #4 Cook for 10 mins.
  • Step #5 Stir in the marshmallows & mix until smooth.
  • Step #6 Stir in the coconut.
  • Step #7 Spread the filling between the cake layers.
  • Step #8 Mix together the cocoa, remaining 1/4 c evaporated milk, the confectioner's sugar, & the vanilla.
  • Step #9 Beat until smooth & spread over top & sides of cake.
