Vegetable Omelet Recipe

Ingredients
  • 1 plum tomato, sliced
  • 2 scallions (white & light green parts), thinly sliced
  • 1/4 c sliced button mushrooms
  • 2 egg whites
  • 1/2 tsp olive oil
  • 1 egg

Directions
  • Step #1 In a small bowl, whisk together the egg & egg whites.
  • Step #2 Heat the oil in an 8-inch nonstick skillet over medium-low heat.
  • Step #3 Add the scallions, tomato, & mushrooms.
  • Step #4 Cook, stirring, until the mushrooms are tender, 2 mins.
  • Step #5 Pour in the egg mixture & cook 2 mins.
  • Step #6 Using a rubber spatula, fold the egg in half & cook 1 min more or until set.
  • Step #7 Transfer to a plate.
