Ingredients
2 1/4 c self-rising flour
3 tbsps melted butter
1 c shredded Cheddar cheese
1 c buttermilk
1/3 c butter, softened & cubed*
Directions
Step #1 Cut softened butter into flour with a pastry mixer or 2 forks just until butter cubes are coated with flour.
Step #2 Using your hands, add cheese, & carefully mix until mixture resembles small peas.
Step #3 Stir in buttermilk with a fork just until mixed.
Step #4 (Mixture will be wet.
Step #5 ) Turn dough out onto a generously floured surface, & pat to 1/2-inch thickness.
Step #6 Cut dough with a well-floured 2-inch round cutter, & place on lightly greased baking sheets.
Step #7 Bake at 450° for 9 to 11 mins or until lightly browned.
Step #8 Remove from oven, & brush warm biscuits with melted butter.
Step #9 Serve as soon as possible.
Step #10 *1/3 c shortening may be substituted.
Step #11 Note: For testing purposes only, we used White Lily Self Rising Flour.
