Pumpkin-date Corn Bread Recipe

Ingredients
  • 1/4 c canola oil
  • 2 eggs, beaten
  • 1 c milk
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 2 tsps baking soda
  • 1 c dates, sliced & pitted
  • 2/3 c firmly packed brown sugar
  • 2 c all-purpose flour
  • 1 tsp ground cinnamon
  • 1 c yellow cornmeal
  • 1 c canned pumpkin

Directions
  • Step #1 Heat oven to 350º F.
  • Step #2 Lightly coat a 5-by-9-inch loaf pan with vegetable cooking spray.
  • Step #3 Combine the flour, cinnamon, cornmeal, baking soda, sugar, baking powder, & salt In a large-ish bowl.
  • Step #4 Stir in the dates, oil, then the pumpkin, milk, & eggs until well mixed.
  • Step #5 Pour into pan.
  • Step #6 Bake 50 mins or until a toothpick inserted in the center of the loaf comes out clean.
  • Step #7 Turn onto a wire rack.
  • Step #8 VARIATIONS: Substitute 1 c golden or brown raisins for the dates or add 3/4 c pecans or macadamia nuts.
