Dolmathes Recipe

Ingredients
  • 1/2 c sliced fresh parsley
  • 2 lemons, juiced
  • 2 tbsps pine nuts
  • 1 3/4 c uncooked white rice
  • 1 (8 oz) jar grape leaves, drained & rinsed
  • 1 c olive oil, divided
  • 2 tbsps sliced fresh dill
  • 1 1/2 lbs onions, sliced

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Heat 2 tbsps oil in a large saucepan over med-heat/flame.
  • Step #3 Saute onions until tender.
  • Step #4 Stir in rice & brown slightly.
  • Step #5 Add 3 1/2 c water, & half of the lemon juice.
  • Step #6 Reduce heat, cover & let simmer for 20 mins, or until all liquid is absorbed & rice is tender.
  • Step #7 Stir in dill, parsley & pine nuts.
  • Step #8 Remove stems from grape leaves & place 1 tbsp of rice mixture in the center.
  • Step #9 Fold in the sides & roll tightly.
  • Step #10 Place, folded side down, in a baking dish & cover with remaining olive oil, lemon juice & enough water to cover 1/2 of the dolmathas.
  • Step #11 Cover with aluminum foil & bake in preheated oven for 45 mins.
