Grapefruit-pecan Bread Recipe

Ingredients
  • 1/2 c sliced pecans
  • 1 tbsp grated grapefruit rind
  • 1/2 tsp baking powder
  •  Vegetable cooking spray
  • 1/2 c sifted powdered sugar
  • 3/4 c sugar
  • 1 tbsp water
  • 2 c all-purpose flour
  • 1 egg
  • 2 tbsps vegetable oil
  • 1 tsp vanilla extract
  • 3/4 tsp baking soda
  • 1 large pink grapefruit (about 1 1/4 lbs)
  • 1/4 tsp salt

Directions
  • Step #1 Peel & section grapefruit over a bowl, reserving juice & membranes.
  • Step #2 Set sections aside.
  • Step #3 Squeeze membranes to extract juice; discard membranes.
  • Step #4 Place sections & juice in a food processor/blender, & pulse 3 times.
  • Step #5 Set aside 1 1/4 c mixture; reserve remaining grapefruit mixture for another use.
  • Step #6 Combine rind, flour, & next 4 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #7 Combine grapefruit mixture, oil, vanilla, & egg; stir well.
  • Step #8 Add to dry ingredients, stirring just until moistened.
  • Step #9 Stir in pecans.
  • Step #10 Pour batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
  • Step #11 Bake at 350° for 1 hr or until a wooden pick inserted in center comes out clean.
  • Step #12 Remove from oven; place on a wire rack.
  • Step #13 Combine powdered sugar & water; stir well with a wire whisk.
  • Step #14 Drizzle over bread; let cool in pan 10 mins.
  • Step #15 Remove from pan; let cool completely on wire rack.
