Broccoli Cornbread Muffins Recipe

Ingredients
  • 1/2 c butter or margarine, melted
  • 1 c (4 oz) shredded Cheddar cheese
  • 2 large eggs
  • 1 (8 1/2-oz) package corn muffin mix
  • 1 (10-oz) package frozen sliced broccoli, thawed
  • 1 small onion, sliced

Directions
  • Step #1 Combine first 4 ingredients In a large-ish bowl; make a well in center of mixture.
  • Step #2 Stir together eggs & butter, mixing well; add to broccoli mixture, stirring just until dry ingredients are moistened.
  • Step #3 Spoon into lightly greased mini muffin pans, filling three-fourths full.
  • Step #4 Bake at 325° for 15 to 20 mins or until golden.
  • Step #5 Let stand 2 to 3 mins before removing from pans.
