Tomato Pie Recipe

Ingredients
  • 1 tsp sugar
  • 1/2 tsp salt
  • 7 plum tomatoes, sliced & drained
  • 1 c mayonnaise
  • 1 tbsp all-purpose flour
  • 1 (3-oz) package put in the fridged shredded Parmesan cheese
  • 1/2 tsp pepper
  • 1/2 (15-oz) package put in the fridged piecrusts

Directions
  • Step #1 Fit piecrust into a 9-inch pieplate according to package directions; fold edges under, & crimp.
  • Step #2 Line piecrust with aluminum foil wrap, & fill with pie weights or dried beans.
  • Step #3 Bake at 350° for 5 mins; remove foil wrap with weights, & bake 4 to 5 more mins.
  • Step #4 Arrange tomato in piecrust, sprinkling each layer evenly with sugar, salt, & pepper.
  • Step #5 Sprinkle top top evenly with flour.
  • Step #6 Stir together mayonnaise & cheese; spread evenly over tomato.
  • Step #7 Bake at 350° for 30 mins.
