Coconut Curry Cabbage Recipe

Ingredients
  • 2 tbsps Indian curry powder
  • 1/4 c sliced green onions
  • 3/4 c coconut milk
  • 1 clove garlic, minced
  • 1/4 c sliced fresh tomato
  • 1 tbsp olive oil
  • 2 tbsps butter
  • 1 small head cabbage, sliced
  • salt & pepper to taste
  • 1/4 c sliced cilantro
  • 1 c julienned carrots
  • 1 small yellow onion, thinly sliced
  • 1/2 c fresh shredded coconut

Directions
  • Step #1 Place a large skillet or wok over high heat.
  • Step #2 Heat the oil & butter until smoking.
  • Step #3 Stir fry the onion, carrot, & garlic until the onion begins to soften, about 1 min.
  • Step #4 Add the cabbage, coconut, & curry powder; stir fry for 2 more mins.
  • Step #5 Reduce heat to medium-low; pour in the coconut milk, & season to taste with salt & pepper.
  • Step #6 Cover, & cook to desired doneness.
  • Step #7 To serve, green onions, sprinkle with tomato, & cilantro.
