Raspberry-cheese Coffee Cake Recipe

Ingredients
  • 1 3/4 c all-purpose flour
  • 1/2 tsp vanilla extract
  • 1/2 c butter or margarine, softened
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 c milk
  • 2 large eggs
  • 1 c sugar
  • 1/2 c seedless raspberry preserves
  • 1 (8-oz) package cream cheese, softened
  • 1/2 tsp baking soda
  • 3 tbsps powdered sugar

Directions
  • Step #1 Beat first 3 ingredients at medium speed with an electric mixer until creamy.
  • Step #2 Add eggs, milk, & vanilla, beating until smooth.
  • Step #3 Combine flour & next 3 ingredients; add to cream cheese mixture, beating at lowish speed until well mixed.
  • Step #4 Spread batter into a greased & floured 13- x 9-inch pan.
  • Step #5 Dollop with preserves, & swirl with a knife.
  • Step #6 Bake at 350° for 30 mins or until cake begins to leave sides of pan.
  • Step #7 Cool slightly, & sprinkle with powdered sugar.
  • Step #8 Cut into squares.
