Raspberry Corn Muffins Recipe

Ingredients
  • 1 1/4 c plain low-fat yogurt
  • 1/2 c yellow cornmeal
  • 1/2 c packed brown sugar
  • 1 tsp grated lemon rind
  • 3 tbsps vegetable oil
  • 1 tsp baking powder
  •  Cooking spray
  • 1/4 tsp salt
  • 1 1/2 c all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 c fresh raspberries
  • 1 tsp baking soda
  • 1/2 tsp granulated sugar

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Whisk together the flour & next 5 ingredients (through salt) in a medium bowl.
  • Step #3 Whisk together yogurt, oil, lemon rind, & eggs.
  • Step #4 Pour into the flour mixture, stirring until just mixed.
  • Step #5 Spoon the batter into 12 muffin c coated with cooking spray.
  • Step #6 Sprinkle top evenly with raspberries & 1/2 tsp of sugar.
  • Step #7 Bake 20 mins or until muffins spring back when touched lightly in the center.
  • Step #8 Remove from the oven & cool 5 mins in the pan.
  • Step #9 Remove muffins from the pan & transfer to a wire rack to cool.
