Popovers Recipe

Ingredients
  • 3/4 c whole milk
  • 1 tbsp plus 1 tsp unsalted butter, melted
  • 1 c all-purpose flour
  • 3 large eggs
  • 1/2 tsp kosher salt

Directions
  • Step #1 Heat oven to 450° F.
  • Step #2 With fingers or a pastry brush, use 1 tsp of the butter to coat 6 c in a popover or muffin tin.
  • Step #3 Whisk the eggs in a small bowl.
  • Step #4 Whisk in the milk & the remaining butter.
  • Step #5 In a large bowl, mix the flour & salt.
  • Step #6 Slowly whisk the eggs into the flour, just until mixd.
  • Step #7 Divide the batter evenly among the c, filling them about halfway.
  • Step #8 Bake for 15 mins (don't open oven door).
  • Step #9 Lower temperature to 350° F & bake this until puffed & golden, 15 to 20 mins more.
  • Step #10 Check one popover by breaking it open.
  • Step #11 If it is slightly underdone (moist, not airy), turn off the oven & leave the popovers inside for 5 to 10 mins more.
