Ingredients
1 c sliced walnuts
1 tsp baking soda
1 3/4 c all-purpose flour
1 c sliced pitted dates
1 lemon (about 5 oz.)
1 large egg
1 tsp salt
1/2 c lemon juice
2 tbsps butter or margarine, at about room temp
1 1/4 c sugar
Directions
Step #1 Coarsely chop lemon, including peel & rind; discard seeds.
Step #2 Place lemon & dates in a food processor/blender; whirl until evenly sliced.
Step #3 Add 3/4 c sugar, the butter, & egg; whirl until mixed & the lemon & dates are finely sliced.
Step #4 In a bowl, mix flour, baking soda, & salt.
Step #5 Add to date mixture; whirl until mixed.
Step #6 Stir in walnuts.
Step #7 Spread batter into a buttered & floured 4- by 8-inch glass loaf pan.
Step #8 Bake in a 325° oven until a toothpick inserted in center of thickest part comes out clean, about 1 hr.
Step #9 Meanwhile, in a 1- to 1 1/2-quart pan, mix remaining 1/2 c sugar & lemon juice.
Step #10 Stir over med-heat/flame until sugar dissolves, about 2 mins.
Step #11 When bread is done, use a long, thin skewer to make holes about 1/2 inch apart all over surface.
Step #12 Pour hot syrup evenly over hot bread in pan.
Step #13 Let stand at about room temp until bread absorbs all syrup, about 2 hrs.
Step #14 Turn out of pan onto plate.
Step #15 Cover up airtight; chill overnight or up to 3 days.
Step #16 Thinly slice to serve.
Step #17 Chill leftover bread airtight.
