Ingredients
3/4 c minced fresh parsley
1/3 c plain low-fat yogurt
3 tbsps chilled butter or stick margarine, cut into small pieces
Cooking spray
1 tsp baking powder
2 tsps 1% low-fat milk
1/2 tsp salt
1/3 c 1% low-fat milk
1 1/2 c all-purpose flour
Directions
Step #1 Preheat oven to 400°.
Step #2 Lightly spoon flour into dry measuring c; level with a knife.
Step #3 Combine flour, baking powder, & salt in a bowl; cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
Step #4 Combine parsley, 1/3 c milk, & yogurt, stirring with a whisk.
Step #5 Add to flour mixture; stir just until moist.
Step #6 Turn dough out onto a floured surface; knead lightly 3 times.
Step #7 Pat dough to a 3/4-inch thickness; cut with a (2-inch) biscuit cutter.
Step #8 Place on a baking sheet coated with cooking spray; brush with 2 tsps milk.
Step #9 Bake at 400° for 18 mins or until lightly browned.
