Quick Breakfast Tostada Recipe

Ingredients
  • 1/4 c fat-free sour cream
  • 1 c canned black beans, rinsed & drained
  • 1/4 c sliced green onions
  • 1/8 tsp freshly ground black pepper
  • 2 large eggs
  • 4 large egg whites
  • 4 (6-inch) corn tortillas
  • 1/2 c (2 oz) shredded reduced-fat sharp cheddar cheese
  • 1/4 c 1% low-fat milk
  • 1/2 c bottled salsa
  • 1/4 tsp salt

Directions
  • Step #1 Combine first 5 ingredients In a large-ish microwave-safe dish, stirring with a whisk.
  • Step #2 Microwave at HIGH for 3 mins; stir.
  • Step #3 Microwave an extra 1 min or until done.
  • Step #4 Arrange 1 tortilla on each of 4 microwave-safe plates; divide egg mixture evenly among the corn tortillas.
  • Step #5 Layer each serving with 2 tbsps cheese, 1/4 c beans, & 1 tbsp green onions.
  • Step #6 Microwave each tostada at HIGH for 30 seconds.
  • Step #7 Top each tostada with 2 tbsps salsa & 1 tbsp sour cream.
  • Step #8 Serve as soon as possible.
