Spinach-cheese Bake Recipe

Ingredients
  • 1 tsp salt
  •  Cooking spray
  • 1 1/2 c fat-free milk
  • 1 tbsp butter, melted
  • 2 tsps Dijon mustard
  • 1 c egg substitute
  • 2 (6-oz) packages fresh baby spinach
  • 1/8 tsp ground red pepper
  • 1 1/4 c (5 oz) shredded reduced-fat sharp cheddar cheese
  • 1 1/3 c all-purpose flour (about 5 3/4 oz)
  • 1 tsp baking powder
  • 1/8 tsp ground nutmeg
  • 1/4 tsp freshly ground black pepper
  • 3/4 c (3 oz) shredded Monterey Jack cheese

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Pour the butter into the bottom of a 13 x 9-inch baking dish coated with cooking spray; tilt dish to coat.
  • Step #3 Place spinach evenly in bottom of dish; sprinkle evenly with cheeses.
  • Step #4 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #5 Combine flour & remaining ingredients in a medium bowl; stir with a whisk until mixed.
  • Step #6 Pour milk mixture over cheese.
  • Step #7 Bake at 350° for 40 mins or until lightly browned.
  • Step #8 Serve as soon as possible.
