Coconut Curry Fish Recipe

Ingredients
  • 1 c uncooked brown rice
  • salt & pepper to taste
  • 1 (16 oz) package frozen stir-fry vegetables
  • 1 tsp ground turmeric
  • 2 tsps chili powder
  • 1 1/2 tbsps curry powder
  • 1 tsp ground cumin
  • 1 lb cod fillets, cut into chunks
  • 1 tbsp vegetable oil
  • 1 large onion, sliced
  • 1 (14 oz) can coconut milk
  • 1 tbsp cornstarch
  • 3 cloves garlic, crushed
  • 2 c water

Directions
  • Step #1 Bring the water & rice to a boil in a pot.
  • Step #2 Cover, reduce heat to low, & let simmer 45 mins.
  • Step #3 Heat the oil in a skillet over medium-high heat.
  • Step #4 Stir in the onion & garlic, & cook 1 min.
  • Step #5 Mix in cod, turmeric, cumin, & season this with curry powder, salt, chili powder, & pepper.
  • Step #6 Pour in the coconut milk, & mix in frozen vegetables.
  • Step #7 Cover, & cook 10 mins, or until vegetables are tender & cod is easily flaked with a fork.
  • Step #8 Drain 1/2 c liquid from the skillet into a bowl, & mix with cornstarch.
  • Step #9 Stir back into skillet to thicken sauce.
  • Step #10 Serve over the cooked rice.
