Streusel-oat Scones Recipe

Ingredients
  • 1/4 c quick-cooking oats
  • 3/4 c low-fat buttermilk
  • 2 c all-purpose flour
  •  Cooking spray
  • 2 tsps baking powder
  • 1/4 c sugar
  • 1/4 c packed brown sugar
  • 1/4 c chilled stick margarine, cut into small pieces
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp margarine, melted
  • 1 tbsp all-purpose flour

Directions
  • Step #1 Preheat oven to 450°.
  • Step #2 Combine first 5 ingredients in a medium bowl; cut in 1/4 c margarine with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #3 Add buttermilk, stirring just until flour mixture is moist.
  • Step #4 Turn dough out onto a baking sheet coated with cooking spray.
  • Step #5 Pat dough into an 8-inch circle; set aside.
  • Step #6 Combine oats, 1 tbsp margarine, brown sugar, & 1 tbsp flour, forming a streusel.
  • Step #7 Gently pat oats mixture into surface of dough.
  • Step #8 Cut dough into 12 wedges (do not separate wedges).
  • Step #9 Bake at 450° for 15 mins or until lightly browned.
  • Step #10 Serve warm.
