Step #1 Heat sliced pecans in a small nonstick skillet over medium-low heat, stirring often, 5 to 8 mins or until toasted.
Step #2 Stir together flour & next 3 ingredients in bowl of an electric mixer.
Step #3 Whisk together sugar, oil, & eggs.
Step #4 Gradually add sugar mixture to flour mixture, beating at lowish speed until mixed.
Step #5 Stir in vanilla.
Step #6 Fold in fruit filling & pecans just until mixed.
Step #7 Pour batter into 2 (8- x 4-inch) loaf pans coated with cooking spray for baking.
Step #8 Bake at 350° for 45 mins; shield with aluminum foil wrap to prevent excessive browning, if necessary, & bake 15 more mins or until a long wooden pick inserted in center comes out clean.
Step #9 Cool loaves in pan on a wire rack 10 mins.
Step #10 Remove from pans to wire rack, & cool 15 mins.
