Peach Pie Quick Bread Recipe

Ingredients
  • 1 tsp baking soda
  • 1 tsp grated lemon rind
  •  Cooking spray for baking
  • 2 c sugar
  • 1 tsp vanilla extract
  • 3/4 c canola oil
  • 3 large eggs
  • 3 c all-purpose flour
  • 1 tsp salt
  • 1 (21-oz.) can peach fruit filling
  • 1 c sliced pecans

Directions
  • Step #1 Heat sliced pecans in a small nonstick skillet over medium-low heat, stirring often, 5 to 8 mins or until toasted.
  • Step #2 Stir together flour & next 3 ingredients in bowl of an electric mixer.
  • Step #3 Whisk together sugar, oil, & eggs.
  • Step #4 Gradually add sugar mixture to flour mixture, beating at lowish speed until mixed.
  • Step #5 Stir in vanilla.
  • Step #6 Fold in fruit filling & pecans just until mixed.
  • Step #7 Pour batter into 2 (8- x 4-inch) loaf pans coated with cooking spray for baking.
  • Step #8 Bake at 350° for 45 mins; shield with aluminum foil wrap to prevent excessive browning, if necessary, & bake 15 more mins or until a long wooden pick inserted in center comes out clean.
  • Step #9 Cool loaves in pan on a wire rack 10 mins.
  • Step #10 Remove from pans to wire rack, & cool 15 mins.
  • Step #11 Note: For testing purposes only, we used Comstock More Fruit Peach Pie Filling or Topping.
