Raspberry-filled Cinnamon Muffins Recipe

Ingredients
  • 1 egg, lightly beaten
  • 2/3 c low-fat buttermilk
  • 1 tsp ground cinnamon
  • 1/2 c sugar
  • 1/4 tsp salt
  • 1/4 c margarine, melted
  •  Vegetable cooking spray
  • 1 tbsp sugar
  • 2 1/2 tsps baking powder
  • 1/4 tsp ground cinnamon
  • 1 1/2 c all-purpose flour
  • 1/4 c seedless raspberry preserves

Directions
  • Step #1 Combine first 5 ingredients in a medium bowl, & make a well in center of mixture.
  • Step #2 Combine buttermilk, & egg, margarine, & stir well.
  • Step #3 Add to the flour mixture, stirring just until moistened.
  • Step #4 Spoon about 1 tbsp batter into each of 12 muffin c coated with cooking spray.
  • Step #5 Spoon 1 tsp preserves into center of each muffin c (do not spread over batter), & top this with remaining batter.
  • Step #6 Combine 1 tbsp sugar & 1/4 tsp cinnamon; stir well.
  • Step #7 Sprinkle top evenly over muffins.
  • Step #8 Bake at 400° for 20 mins or until muffins spring back when touched lightly in center.
  • Step #9 Remove muffins from pans as soon as possible, & place on a wire rack.
