Coffee Souffle Recipe

Ingredients
  • 1/4 tsp salt, divided
  • 1 1/2 c brewed coffee
  • 3 eggs, separated
  • 1/2 c white sugar, divided
  • 1/2 c milk
  • 1 envelope (1 tbsp) unflavored gelatin
  • 1/2 tsp vanilla extract

Directions
  • Step #1 In the top of a double boiler over simmering water, mix coffee, milk, half the sugar, half the salt & gelatin.
  • Step #2 Stir until solids are dissolved.
  • Step #3 Stir in remaining sugar & salt & the egg yolks.
  • Step #4 Cook & stir until thick & creamy, & mixture coats the back of a metal spoon.
  • Step #5 Remove from heat.
  • Step #6 Whip the egg whites (with a pinch of salt, if desired) until stiff peaks form.
  • Step #7 Fold egg whites & vanilla into slightly cooled custard.
  • Step #8 Pour into a serving dish or mold & chill until set.
