Three-cheese Spinach Quiche Recipe

Ingredients
  • 1 (10-oz) package frozen sliced spinach
  • 1/2 c (2 oz) crumbled feta cheese
  • 1/4 tsp salt
  • 1/2 (17 1/4-oz) package frozen puff pastry sheets, thawed
  • 1/2 c finely sliced onion
  • 1 1/2 c (6 oz) shredded mozzarella cheese
  • 1 c whipping cream
  • 3 large eggs, lightly beaten
  • 1 (7-oz) jar roasted red peppers, drained & sliced
  • 1/2 tsp pepper
  • 1/2 c (2 oz) shredded Cheddar cheese

Directions
  • Step #1 Unfold pastry sheet onto a lightly floured surface.
  • Step #2 Roll into a 13" square.
  • Step #3 Place in a lightly greased 9" deep-dish pieplate.
  • Step #4 Fold edges under, & crimp.
  • Step #5 Prick pastry lightly with a fork.
  • Step #6 Freeze at least 15 mins to make pastry firmer.
  • Step #7 Bake pastry at 400° for 12 mins.
  • Step #8 Let cool on a wire rack.
  • Step #9 Reduce oven temperature to 350°.
  • Step #10 Cook spinach according to package directions.
  • Step #11 Squeeze spinach between several layers of paper towels to remove excess moisture.
  • Step #12 Combine spinach, cream, 1/2 tsp pepper, & eggs, salt, stirring well.
  • Step #13 Sprinkle top mozzarella & Cheddar cheeses & onion into pastry shell.
  • Step #14 Add spinach mixture.
  • Step #15 Top with red pepper; sprinkle with feta cheese.
  • Step #16 Bake, uncovered, at 350° for 55 mins or until set.
  • Step #17 Cover up loosely with aluminum foil wrap, & let this stand 30 mins before serving.
  • Step #18 Note: You can use 1/2 (15-oz) package put in the fridged piecrusts instead of puff pastry in this quiche, but it won't be as flaky.
