Jilted Eggs Recipe

Ingredients
  •  Cooking spray
  • 1 1/2 c sliced tomato
  • 1 tbsp sliced fresh basil
  • 1/4 c plus 2 tbsps (1 1/2 oz) shredded reduced-fat sharp cheddar cheese
  • 1/4 tsp black pepper
  • 3/4 tsp salt
  • 3 English muffins, split & toasted
  • 6 large eggs
  • 3/4 c 2% reduced-fat milk

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Break eggs, 1 at a time, into a shallow casserole dish coated with cooking spray.
  • Step #3 Combine tomato & basil.
  • Step #4 Top each egg with 1/4 c tomato mixture.
  • Step #5 Combine milk, salt, & pepper; spoon 2 tbsps milk mixture over tomato mixture.
  • Step #6 Sprinkle top each serving with 1 tbsp cheese.
  • Step #7 Bake at 350° for 20 mins or until eggs are set.
  • Step #8 Serve with English muffins.
  • Step #9 Note: Eggs can also be baked individually.
  • Step #10 Break 1 egg into each of 6 (6-oz) custard c coated with cooking spray.
  • Step #11 Top with tomato & milk mixtures & cheese as directed in recipe.
  • Step #12 Place c on a baking sheet, & bake as directed.
