Ingredients
  • icing sugar, to serve .
  • 2 tsps baking powder .
  • 1/2 tsp nutmeg .
  • 2 tsps vanilla .
  • 2 eggs .
  • 1/2 tsp lemon rind .
  • 1/2 tsp salt .
  • 5 tbsps sugar .
  • vegetable oil, to fry .
  • 225 g cold cooked rice .
  • 100 g flour

Directions
  • Step #1 In a mixing bowl, mix eggs & sugar & beat on high until yellow.
  • Step #2 Add vanilla, salt, nutmeg, lemon, baking powder & rice.
  • Step #3 Stir in until well-mixed.
  • Step #4 Add enough flour to bind ingredients.
  • Step #5 Heat 7.
  • Step #6 5 cm/3 inch oil in a pan or wok to 185 degrees Celsius Drop tspfuls of mixture into hot oil - but do not crowd.
  • Step #7 Fry until golden brown, turning once (about 4 min).
  • Step #8 Remove from oil, drain, place on kitchen paper & keep warm in oven whilst finishing.
  • Step #9 Serve sifted with icing sugar.
