2 tsps baking powder .
1/2 tsp nutmeg .
2 tsps vanilla .
2 eggs .
1/2 tsp lemon rind .
1/2 tsp salt .
5 tbsps sugar .
vegetable oil, to fry .
225 g cold cooked rice .
100 g flour
Directions
Step #1 In a mixing bowl, mix eggs & sugar & beat on high until yellow.
Step #2 Add vanilla, salt, nutmeg, lemon, baking powder & rice.
Step #3 Stir in until well-mixed.
Step #4 Add enough flour to bind ingredients.
Step #5 Heat 7.
Step #6 5 cm/3 inch oil in a pan or wok to 185 degrees Celsius Drop tspfuls of mixture into hot oil - but do not crowd.
Step #7 Fry until golden brown, turning once (about 4 min).
Step #8 Remove from oil, drain, place on kitchen paper & keep warm in oven whilst finishing.
Step #9 Serve sifted with icing sugar.
