Chicken Roche Recipe

Ingredients
  • 1 tbsp Creole seasoning
  • 1 (14.5 oz) can sliced tomatoes
  • 1 (14.5 oz) can green beans, drained
  • 1 (15 oz) can black beans, drained
  • 2 c water
  • 1 c uncooked long grain white rice
  • 2 tbsps vegetable oil
  • 1 1/2 tbsps chili powder
  • 4 skinless, boneless chicken breast halves - cut into strips

Directions
  • Step #1 In a pot, bring the rice & water to a boil.
  • Step #2 Reduce heat to low, cover, & let simmer 20 mins.
  • Step #3 Heat the oil in a skillet over med-heat/flame, & cook the chicken strips 10 mins, or until browned & juices run clear.
  • Step #4 In a saucepan over medium-low heat, green beans, mix the black beans, sliced tomatoes, Creole seasoning, & chili powder.
  • Step #5 Cook, stirring every once in awhile, until heated through.
  • Step #6 Mix the chicken into the bean & tomato mixture, & continue cooking 5 mins.
  • Step #7 Serve over the rice.
