Creamed Spinach Recipe

Ingredients
  • 1 tsp salt
  • 1 lb fresh spinach
  • 1 tsp butter or margarine
  • 1 tsp all-purpose flour
  • 1/2 c water

Directions
  • Step #1 Wash spinach well & remove any hard stems.
  • Step #2 In a large pot, bring water to a boil & add spinach (it will cook down very rapidly).
  • Step #3 Remove spinach from the stovetop, let cool slightly then drain reserving the water.
  • Step #4 Using an electric food processor/blender, puree the spinach.
  • Step #5 Make roux with the butter, flour & reserved water.
  • Step #6 Add the roux to the spinach, stir & serve.
