Maple Pumpkin Loaf Recipe

Ingredients
  • 2/3 c orange juice .
  • 2 large eggs .
  • 3 tbsps sliced pecans (Toasted) .
  • 1/3 c packed brown sugar .
  • 1 tsp baking soda .
  • 1 c maple syrup .
  • 1/3 c butter or margarine .
  • 2/3 c cranberries .
  • 14 oz pumpkin puree (No spices) .
  • 1/4 tsp salt .
  • 2 1/2 c flour .
  • 1/2 c maple syrup .
  • 2 1/2 tsps baking powder

Directions
  • Step #1 Heat & stir orange juice & cranberries in small saucepan on medium heat until just boiling.
  • Step #2 Remove from heat.
  • Step #3 Let stand for about 30 minuntes until cooled to about room temp.
  • Step #4 Combine next 4 ingredients in large bowl.
  • Step #5 Make a well in centre.
  • Step #6 Beat butter & brown sugar in medium bowl until light & creamy.
  • Step #7 Add eggs, 1 at a time, beating well after each addition.
  • Step #8 Add pumpkin & first amount of maple syrup.
  • Step #9 Beat until smooth.
  • Step #10 Add to well.
  • Step #11 Add orange juice mixture.
  • Step #12 Stir utnil just moistened.
  • Step #13 Line bottom & sides of lightly greased 9x5x3 inch loaf pan with parchment paper(not waxed), leaving 1 1/2 inch overhang on each side.
  • Step #14 Spoon batter into pan.
  • Step #15 Spread evenly.
  • Step #16 Bake in 350 degree oven for 70 -75 mins until wooden toothpick inserted comes out clean.
  • Step #17 Remove pan to wire rack.
  • Step #18 Run knife around loaf to loosen.
  • Step #19 Do not remove this from pan.
  • Step #20 Boil second amount of maple syrup in small heavy saucepan on medium for 3-5 min until lightly reduced & thickened.
  • Step #21 Carefully pour hot syrup evenly over loaf.
  • Step #22 Immediately sprinkle with toasted pecans.
  • Step #23 Let stand in pan on wire rack for 30 min Lift loaf from pan using parchment paper edges & handles.
  • Step #24 Set on wire rack to cool completely, disgarding parchment paper.
  • Step #25 Cuts into 16 pieces.
