Ingredients
1/2 tsp cream of tartar
1 c flaked coconut
3 egg whites
1/4 c white sugar
2 tbsps almond paste
1/2 c miniature semisweet chocolate chips
Directions
Step #1 Preheat oven to 325F degrees F (165 degrees C).
Step #2 Line cookie sheets with parchment paper or grease lightly.
Step #3 In a medium bowl, mix together the sugar & almond paste using your fingers until the paste is completely worked into the sugar.
Step #4 Stir in the coconut & chocolate chips.
Step #5 In a clean dry glass or metal bowl, Whip egg whites & cream of tartar to stiff peaks.
Step #6 Fold half of the egg whites into the coconut mixture to lighten the batter.
Step #7 Gently fold in the remaining whites, being careful not to deflate.
Step #8 Drop by rounded tspfuls onto the prepared cookie sheets.
Step #9 Bake for 20 mins in the preheated oven, or until tops are lightly browned.
Step #10 Allow cookies to cool on baking sheet for a few mins before removing to a wire rack to cool completely.
