Choconut Macaroons Recipe

Ingredients
  • 1/2 tsp cream of tartar
  • 1 c flaked coconut
  • 3 egg whites
  • 1/4 c white sugar
  • 2 tbsps almond paste
  • 1/2 c miniature semisweet chocolate chips

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Line cookie sheets with parchment paper or grease lightly.
  • Step #3 In a medium bowl, mix together the sugar & almond paste using your fingers until the paste is completely worked into the sugar.
  • Step #4 Stir in the coconut & chocolate chips.
  • Step #5 In a clean dry glass or metal bowl, Whip egg whites & cream of tartar to stiff peaks.
  • Step #6 Fold half of the egg whites into the coconut mixture to lighten the batter.
  • Step #7 Gently fold in the remaining whites, being careful not to deflate.
  • Step #8 Drop by rounded tspfuls onto the prepared cookie sheets.
  • Step #9 Bake for 20 mins in the preheated oven, or until tops are lightly browned.
  • Step #10 Allow cookies to cool on baking sheet for a few mins before removing to a wire rack to cool completely.
