Cod Fish Cakes Recipe

Ingredients
  • 1/3 c fine dry breadcrumbs .
  • 2 tbsps finely sliced fresh tarragon leaves .
  • 1 egg, lightly beaten .
  • 3 tbsps olive oil .
  • 1 1/4 lbs fresh cod, bones removed .
  • 1 large onion, finely sliced (about 1 1/2 c) .
  • 3 dashes Tabasco sauce (to taste) .
  • 1 1/2 tsps salt .
  • 1/4 tsp fresh ground black pepper

Directions
  • Step #1 Heat oven to 200*F.
  • Step #2 Heat 1 TBS olive oil in a skillet over med-heat/flame.
  • Step #3 Add onion, 1/2 tsp salt, & 1/8 tsp pepper.
  • Step #4 Cook until the onions are translucent, about 5 mins.
  • Step #5 Set aside.
  • Step #6 Cut fish into large chunks; pulse in a food processor/blender to coarsely chop.
  • Step #7 Transfer to a medium bowl.
  • Step #8 Add onion, egg & Tabasco, tarragon, combining well.
  • Step #9 Add remaining salt & pepper.
  • Step #10 Form 8 3-inch patties; dredge them in bread crumbs, shaking off excess.
  • Step #11 Heat 1 TBS oil In a large-ish skillet, over medium low heat.
  • Step #12 Cook 4 patties until browned, about 4 to 5 mins on each side.
  • Step #13 Remove to a baking sheet, cover with aluminium foil wrap, & keep warm in oven while you cook the other 4.
  • Step #14 Wipe out skillet, return to heat & add in the remaining oil.
  • Step #15 Cook remaining patties & serve as soon as possible with tartar sauce.
