Corn Popovers Recipe

Ingredients
  • 4 large eggs, lightly beaten .
  • 1/2 c fresh corn kernels, lightly mashed with a fork .
  • 1 c milk .
  • 1 tbsp coarse yellow cornmeal .
  • 1 tsp sugar .
  • 1 tbsp fresh chives, snipped .
  • 1 tbsp butter, melted & cooled to about room temp .
  • 1 c flour .
  • fresh ground pepper, to taste .
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 425*F.
  • Step #2 Butter a 12 c popover pan or muffin pan.
  • Step #3 In a medium bowl mix together the flour, cornmeal, sugar, salt, & pepper.
  • Step #4 Stir in remaining ingredients until almost mixed(a few lumps should remain).
  • Step #5 Pour 1/4 c of batter into each c, & bake this until puffed & deep golden, 25 to 30 mins.
  • Step #6 Serve as soon as possible.
