Beef-coconut Sates Recipe

Ingredients
  • 2 tbsps olive oil .
  • 1 tsp curry powder .
  • 1/2 lime, juice of .
  • 1 tbsp teriyaki sauce .
  • 1 c flaked coconut .
  • 3 tbsps smooth peanut butter .
  • 1 tbsp teriyaki sauce .
  • 1/4 c light coconut milk .
  • Coconut-Peanut Dipping Sauce .
  • salt & pepper .
  • 1 lb ground round .
  • 1/2 tsp ground ginger .
  • Sates .
  • 1/2 lime, juice of

Directions
  • Step #1 In large bowl mix all sate ingredients & mix thoroughly.
  • Step #2 Form mixture into sausage shapes about 4 inches long & 1 inch wide.
  • Step #3 In large nonstick skillet over medium-high heat cook sates 'til all sides are browned then lower heat to medium & cook 'til firm.
  • Step #4 While sates are cooking, peanut butter, in a small bowl whisk together coconut milk, teriyaki sauce & lime juice 'til smooth.
  • Step #5 Place finished sates on a platter & serve this with coconut-peanut dipping sauce.
