Cranberry Pudding Recipe

Ingredients
  • 1 c white sugar
  • 1/2 tsp baking soda
  • 1 1/2 c all-purpose flour
  • 1/3 c boiling water
  • 1 tsp vanilla extract
  •  
  • 1/2 tsp salt
  • 2 c cranberries
  • 1/2 c butter, softened
  • 1/2 c heavy whipping cream
  • 1/2 c molasses

Directions
  • Step #1 Lightly grease a 2 quart metal container or a clean 1 lb coffee can.
  • Step #2 Pick over whole cranberries, wash & drain.
  • Step #3 Sift together the flour & salt; dredge cranberries in flour mixture.
  • Step #4 Dissolve soda into boiling water & add molasses.
  • Step #5 Stir & allow to foam up.
  • Step #6 Add to the flour & cranberry mixture.
  • Step #7 Mix together until well mixed.
  • Step #8 Spoon into a greased metal container; cover with a double layer of tinfoil & fasten with heavy elastic band or string.
  • Step #9 Place into a deep saucepan & fill with water up to about the half way mark on the pudding can.
  • Step #10 Cover pan & place over high heat.
  • Step #11 Bring water to boil, reduce heat & let simmer for one hr.
  • Step #12 Remove from water & allow this to cool.
  • Step #13 When ready to serve, invert pan or open bottom of can & push through.
  • Step #14 Slice in 1/2 inch pieces.
  • Step #15 Prepare the sauce by mixing together the sugar, butter & cream.
  • Step #16 Cook over med-heat/flame until thick, stirring constantly.
  • Step #17 Add vanilla & pour over individual slices of pudding.
