Curry Lamb Chops Recipe

Ingredients
  • 1 tbsp canola oil
  • 1 tsp curry powder
  • 2 tbsps reduced sodium teriyaki sauce
  • 3/4 c orange juice
  • 4 (4 oz) lamb loin chops
  • 2 tbsps cold water
  • 2 tsps grated orange peel
  • Hot cooked rice
  • 1 garlic clove, minced
  • 1 tsp cornstarch

Directions
  • Step #1 In a skillet, brown the lamb chops on both sides in oil; drain.
  • Step #2 Combine the orange juice, orange peel, teriyaki sauce, curry & garlic; pour over lamb.
  • Step #3 Cover & let simmer for 15-20 mins or until meat is tender.
  • Step #4 Remove chops & keep warm.
  • Step #5 Combine cornstarch & water until smooth; stir in theto pan drippings.
  • Step #6 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #7 Serve lamb & gravy with rice if desired.
