Curry Lamb Chops Recipe

Ingredients
  • 2 garlic cloves, pressed .
  • 4 (4 oz) bone-in lamb loin chops .
  • 1 tbsp olive oil .
  • 3/4 c orange juice .
  • 1 tsp cornstarch .
  • 2 tbsps teriyaki sauce .
  • 1 tbsp grated orange zest .
  • 1 1/2 tsps curry powder .
  • 2 tbsps cold water

Directions
  • Step #1 In a medium skillet, warm the oil & brown lamb chops on all sides; drain excess fat.
  • Step #2 Combine the orange juice, orange peel, teriyaki sauce, curry & garlic; pour over lamb.
  • Step #3 Cover up & let simmer for 15 to 20 mins or until meat is tender.
  • Step #4 Remove the chops & keep warm while preparing the sauce.
  • Step #5 Combine the cornstarch & water until smooth; stir in theto pan drippings.
  • Step #6 Bring to a boil & cook, stirring constantly for 2 mins or until thickened.
  • Step #7 Serve chops on top of cooked rice or couscous & pour gravy over.
