Cranberry Stuffed Apples Recipe

Ingredients
  • 2 tbsps brown sugar
  • 1 1/2 c water
  • 1 dash ground nutmeg
  • 1/4 c sliced walnuts
  • 4 large tart apples
  • 1/2 tsp ground cinnamon
  • 1 tbsp butter
  • 1/3 c orange juice
  • 1/3 c dried cranberries or raisins

Directions
  • Step #1 In a small bowl, mix cranberries & orange juice; let this stand for 20 mins.
  • Step #2 Core apples, leaving bottoms intact; peel tops of apples.
  • Step #3 Place each on a 12-in.
  • Step #4 square piece of foil.
  • Step #5 Drain cranberries; add the walnuts, brown sugar, cinnamon & nutmeg.
  • Step #6 Stuff into apples; dot with butter.
  • Step #7 Bring corners of foil up around each apple & twist to seal.
  • Step #8 Place on a rack in a pressure cooker; add water.
  • Step #9 Close cover securely; place pressure regulator on vent pipe.
  • Step #10 Bring cooker to full pressure over high heat.
  • Step #11 Reduce heat to medium-high; cook for 10 mins.
  • Step #12 (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.
  • Step #13 ) Remove from the heat.
  • Step #14 Immediately cool according to manufacturer's directions until pressure is completely reduced.
  • Step #15 Remove apples from foil; serve warm or at about room temp.
