Single Pie Crust Recipe

Ingredients
  • 3-4 tbsps ice water .
  • 4 tbsps butter, chilled in about 4 pieces .
  • 1 c all-purpose flour .
  • 1/4 tsp salt .
  • 2 tbsps shortening, chilled in about 4 pieces .
  • 1 tsp sugar

Directions
  • Step #1 Whisk together flour, salt & sugar In a large-ish bowl.
  • Step #2 Rub in butter & shortening with your fingertips until mixture is very coarse, but no pieces larger than a large pea remain.
  • Step #3 Using a fork, stir in the ice water until dough almost comes together into a ball.
  • Step #4 Press dough into a ball with your hands & wrap in plastic.
  • Step #5 Chill for at least 30-60 mins before using.
  • Step #6 To prebake, preheat your trusty oven to 375°F Roll dough out to fit a 9-inch pie pan & trim the crust.
  • Step #7 Prick the bottom with a fork a few times.
  • Step #8 Line the inside of the crust with aluminum foil wrap, not covering the edges, & fill with pie weights or about 2 c of dried beans.
  • Step #9 Bake for 25 mins, until very lightly browned.
  • Step #10 Remove foil wrap & weights & bake for an extra 10 to 15 mins, until medium brown at the edges.
  • Step #11 Set aside to cool.
