Apple-mango Crisp Recipe

Ingredients
  • 1/2 c flour .
  • 1/4 c flour .
  • 3 red apples, cored & sliced coarsely (see note) .
  • 3/4 c rolled oats .
  • 3 green apples, cored & sliced coarsely (see note) .
  • 1 1/2 tsps cinnamon .
  • 1/2 c brown sugar, packed .
  • 1/2 c toasted wheat germ .
  • 1/4 c butter, melted .
  • 3 tbsps lime juice .
  • 4 c frozen mangoes, sliced coarsely .
  • 1/3 c sliced pecans

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Grease a 13x9 cake pan.
  • Step #3 In a medium bowl, stir this together first five ingredients; stir in the butter--distributing evenly.
  • Step #4 Set aside.
  • Step #5 Place apples in large bowl, sprinkle with lime juice, then remaining flour; stir this to mix, then fold in mango chunks.
  • Step #6 Pour apple-mango mixture into prepared pan; top this with oat-sugar mixture.
  • Step #7 Bake (uncovered) for 30 mins; sprinkle with pecans, bake another 10-15 mins (apples should be tender throughout).
  • Step #8 Cool slightly, serve warm with whipped cream or vanilla ice cream.
  • Step #9 NOTE: My hubby noted that he would prefer the apples to be peeled next time.
