Ingredients
  • 1/4 c sliced scallions .
  • 1 tbsp sesame oil .
  • 1 tbsp soy sauce .
  • 1 oz uncooked rice sticks .
  • 8 round rice paper sheets .
  • 1/4 c cilantro leaves .
  • 1 c shredded green leaf lettuce .
  • 1/4 c rice wine vinegar .
  • 1/4 c lime juice .
  • 16 cooked shelled de-veined shrimp .
  • 3 tbsps shredded fresh basil .
  • 2 tsps brown sugar .
  • 1/4 tsp crushed red pepper flakes .
  • 1 lb peeled shredded carrots .
  • 1 tsp sliced garlic .
  • 2 tsps minced fresh ginger .
  • 1 c seeded sliced red bell peppers

Directions
  • Step #1 Place the first 6 ingredients in a jar & shake.
  • Step #2 Cook rice sticks.
  • Step #3 Combine with next 8 ingredients.
  • Step #4 Cut each shrimp in half.
  • Step #5 Soften rice sheets, one at a time.
  • Step #6 Place ½ c filling & 4 slices shrimp & wrap.
  • Step #7 Serve with sauce.
