Corny Garlic Mashed Potatoes Recipe

Ingredients
  • 1 (11 oz) can whole kernel corn, drained .
  • 1 c sour cream .
  • salt & pepper .
  • 1 c shredded cheddar cheese .
  • 2 tbsps milk .
  • 3 green onions, sliced .
  • 1 whole head of garlic .
  • 1/2 c butter, cubed .
  • 8 medium red potatoes, peeled & cut into chunks .
  • 1 tbsp olive oil .
  • 1 tbsp minced fresh parsley

Directions
  • Step #1 Remove papery outer skin from garlic (do not peel or separate cloves).
  • Step #2 Brush with oil.
  • Step #3 Wrap in heavy-duty foil wrap.
  • Step #4 Bake at 425° for 30-35 mins or until softened.
  • Step #5 Cool for 10-15 mins.
  • Step #6 Cut top off garlic head, leaving the root end intact.
  • Step #7 Squeeze softened garlic into a large bowl; set aside.
  • Step #8 Place potatoes In a large-ish saucepan & cover with water.
  • Step #9 Bring to a boil.
  • Step #10 Reduce heat; cover & cook for 15-20 mins or until tender.
  • Step #11 Drain & add to garlic.
  • Step #12 Add the butter, sour cream, milk & parsley; mash.
  • Step #13 Add the onions, corn, salt & pepper; mix well.
  • Step #14 Spoon into a greased 11-in.
  • Step #15 x 7-in.
  • Step #16 x 2-in.
  • Step #17 baking dish.
  • Step #18 Sprinkle top with the cheese.
  • Step #19 Bake, uncovered, at 350° for 25 mins or until heated through.
  • Step #20 **Total cook time does not include letting the garlic cool for 10-15 mins.
