Rum Cake Recipe

Ingredients
  • 1/4 c water .
  • 1/2 c water .
  • 1/4 c rum, light preferred .
  • 1 c sugar .
  • 1/2 c sliced pecans .
  • cake mixture .
  • 1/2 c rum, light preferred .
  • 1/2 c butter or margarine .
  • 4 large eggs .
  • 1 (3 1/2 oz) package instant pudding mix .
  • 1 (18 1/2 oz) box yellow cake mix .
  • rum syrup .
  • 1/2 c vegetable oil

Directions
  • Step #1 Preheat oven to 325F degrees spray 2 qt Bundt pan with non stick spray.
  • Step #2 Using mixer at lowish speed, pudding mix, rum, mix the cake mix, oil & water.
  • Step #3 Add the eggs one at a time mixing well after each.
  • Step #4 Sprinkle top pecans in the bottom of bundt pan & pour the batter on top of pecans.
  • Step #5 Bake for 50 to 55 mins, butter, until knife inserted an inch from the center comes out clean do not remove cake from the pan! Make rum syrup: In a small saucepan bring sugar, rum & water to a boil & cook for 3 mins.
  • Step #6 With a fork or wooden skewer, make holes in the top of cake.
  • Step #7 Pour the syrup over the cake & let it sit for 30 mins while the syrup is absorbed.
  • Step #8 Invert cake pan onto a serving plate.
  • Step #9 Allow it to sit for several mins & the cake will loosen from the pan.
