Ingredients
  • 2 tbsps sugar
  • 1 c milk
  • 2 1/2 tsps baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 c all-purpose flour
  • 3/4 c flaked coconut, toasted
  • 1/3 c shortening

Directions
  • Step #1 In a large bowl, sugar, mix the flour, baking powder & salt; cut in shortening until crumbly.
  • Step #2 Combine milk & vanilla; stir in theto dry ingredients just until moistened.
  • Step #3 Fold in coconut.
  • Step #4 Drop by 2 tbspfuls 2 in.
  • Step #5 apart onto greased baking sheets.
  • Step #6 Bake at 425F degrees F for 8-10 mins or until golden brown.
  • Step #7 Serve warm.
