Ingredients
1/2 c sweetened flaked coconut, sliced .
3/4 c pecans, sliced .
3/4 c sugar .
1 (17 5/8 oz) box brownie mix .
1/4 c water .
1/3 c vegetable oil .
1/2 tsp vanilla extract .
1 c sweetened flaked coconut .
1/2 c pecans, sliced .
5 oz evaporated milk .
1 tsp coconut extract .
1 large egg .
5 tbsps unsalted butter, cut up .
2 egg yolks
Directions
Step #1 Brownies: Preheat oven to 350 degrees.
Step #2 Grease a 13x9" pan with cooking spray.
Step #3 Combine the brownie mix, water, egg, oil & coconut extract In a large-ish bowl.
Step #4 Mix just until mixed.
Step #5 Stir in the 1/2 c coconut & 1/2 c pecans.
Step #6 Pour into the prepared pan & bake for 20-25 mins, or until done.
Step #7 Frosting: Combine 3/4 c sugar, butter, milk & egg yolks in a saucepan.
Step #8 Cook on medium high heat, stirring, until thickened (about 13-15 mins).
Step #9 Add in the 1 c coconut, 3/4 c pecans & vanilla.
Step #10 Cook about 2 more mins.
Step #11 When the brownies are done, pour on the warm topping & spread to the edges.
Step #12 Cool 20 mins on a wire rack.
Step #13 Chill until ready to serve.
Step #14 You can use the foil wrap to life the brownies out of the pan to make slicing easier.
