Cornbread-sausage Stuffing Recipe

Ingredients
  • 4 medium onions, finely sliced .
  • 2 tbsps dried sage .
  • 14 c cornbread stuffing mix .
  • 3 tbsps parsley, finely sliced .
  • 3 celery ribs, finely sliced, with their leaves .
  • butter .
  • 1 lb sweet Italian sausage, casing removed & sausage crumbled .
  • 1 tsp black pepper, fresh-ground

Directions
  • Step #1 Preheat oven to 325F degrees if baking stuffing separately.
  • Step #2 Heat a large skillet over med-heat/flame.
  • Step #3 Add sausage & saute until sausage is cooked & no longer pink.
  • Step #4 Remove sausage from pan with a slotted spoon to a large mixing bowl, reserving fat in skillet.
  • Step #5 Add onion & celery to skillet & saute, stirring every once in awhile, about 10 mins until softened (add butter if mixture becomes too dry).
  • Step #6 Add to mixing bowl with sausage & add in the remaining ingredients, mixing well to mix.
  • Step #7 Place the stuffing in a well-buttered 13- by 9-inch roasting pan.
  • Step #8 Cover up with foil wrap & bake for 30 mins, then uncover & bake 15 mins more, until top is browned.
  • Step #9 Or cool stuffing & place it in the cavity of a turkey & follow directions for Roasted Turkey.
