Cold Spaghetti Recipe

Ingredients
  • 4 ripe tomatoes - peeled & seeded
  • 1 tsp olive oil
  • 1/2 c shredded Parmesan cheese
  • 1 (8 oz) package uncooked spaghetti
  • 1/3 c sliced fresh basil
  • 3 cloves garlic, peeled
  • 1/2 tsp white sugar

Directions
  • Step #1 In a mixer or food processor/blender, basil, garlic, mix tomatoes, oil & sugar & process until smooth.
  • Step #2 Cover & put in the fridge sauce.
  • Step #3 Bring a large pot of lightly salted water to a boil.
  • Step #4 Add pasta & cook for 8 to 10 mins or until al dente; drain.
  • Step #5 Remove sauce from refrigerator & pour over spaghetti.
  • Step #6 Toss to coat & serve topped with Parmesan cheese.
