Step #1 Cook syrup, sugar, & water to soft ball stage (a small amount dropped into cold water forms a soft ball).
Step #2 Pour half of this mixture over stiffly beaten egg whites.
Step #3 Stir.
Step #4 Cook remaining sugar mixture to brittle stage (a small amount dropped into cold water turns as soon as possible brittle).
Step #5 Add to previous mixture & beat until candy will hold its shape.
Step #6 Beat again by hand to re-aerate it.
Step #7 Drop by spoonfuls onto waxed paper.
Step #8 Allow to harden as it cools.
Step #9 Store in refrigerator with waxed paper between layers.
