Collards Recipe

Ingredients
  • 2 large potatoes, peeled & cubed
  • 3 bunches collard greens - rinsed, stemmed & thinly sliced
  • 1/2 onion, sliced
  • 1/2 c red wine vinegar
  • 4 slices bacon

Directions
  • Step #1 Place potatoes in a large pot with enough water to cover.
  • Step #2 Bring to a boil over med-heat/flame.
  • Step #3 Before the potatoes are finished, add the collards to the pot.
  • Step #4 Place bacon in a deep skillet over medium-high heat.
  • Step #5 Cook until evenly browned, about 10 mins.
  • Step #6 Remove bacon to paper towels to drain, & saute the onion in bacon grease until tender.
  • Step #7 Drain onions of grease, & add to the greens.
  • Step #8 Crumble in the bacon, & stir in the the wine vinegar.
  • Step #9 Simmer over low heat/flame until greens are tender, about 1 hr.
